

Truffle juice is extracted from fresh truffles by appertization - cooking and sterilization according to traditional know-how. During its first cooking, the fresh truffle will lose between 15 and 20% of its weight in juice. All the scents of the truffle are found in this slightly salty nectar that will sublimate your recipes.
